Cottage Cheese Scramble with Spinach

Ingredients
3 large eggs
¼ cup full-fat cottage cheese
1 Tbsp butter or tallow (for cooking)
½ cup fresh spinach, chopped
Salt and pepper, to taste
Optional: 1 tsp olive oil (cold drizzle)
Optional garnish: red pepper flakes or fresh herbs

Preparation
In a nonstick skillet, melt butter or tallow (1 Tbsp) over medium heat. Add chopped spinach (½ cup) and sauté for 1–2 minutes, until wilted. Push to the side of the pan.
In a bowl, whisk eggs (3) with cottage cheese (¼ cup), salt, and pepper. Pour mixture into the skillet and gently scramble, folding the spinach in as the eggs cook.
Cook until just set, about 2–3 minutes, keeping the curds soft and moist.
Plate warm and drizzle with olive oil (1 tsp) if desired. Garnish with red pepper flakes or herbs like chives or parsley.
Chris Russell, a Navy veteran turned law enforcement officer, now serves as both a member of the MetFix Academy staff and the owner of MetFix JAX in Florida. His story traces a journey from the structured world of military life to the vulnerability of personal reckoning and renewal. After two decades in the Navy—including deployments supporting special operations units during the Afghanistan conflict—Russell faced the loss of purpose that often accompanies military retirement. The transition to civilian life brought depression, addiction, and the unraveling of identity once defined by discipline and camaraderie. When his hidden struggles surfaced publicly, what could have ended in ruin became a turning point: met not with condemnation but with grace, forgiveness, and compassion. That experience redefined his faith, restored his family, and reshaped his mission.
Today, Chris channels those lessons to help veterans, first responders, and civilians alike confront pain without shame. He reminds others that suffering is universal—but isolation is not inevitable. Within MetFix JAX, the ethos is simple: no one rows alone. Russell believes that connection, honesty, and shared struggle form the lifeline to healing.
