Skirt Steak With Chimichurri
Seared skirt steak paired with a fresh and zesty chimichurri sauce made with parsley, cilantro, garlic, and red pepper flakes.
Ingredients:
For the Chimichurri:
4 Tbsp fresh parsley, chopped
2 Tbsp cilantro, chopped
1 clove garlic, minced
½ tsp red pepper flakes
1 Tbsp red wine vinegar
4 tsp olive oil
1 Tbsp lime juice
Salt and black pepper, to taste
For the Steak:
6 oz skirt steak

Preparation:
Prepare the chimichurri: In a small bowl, mix fresh chopped parsley (4 Tbsp), fresh chopped cilantro (2 Tbsp), minced garlic (1 clove), red pepper flakes (½ tsp), red wine vinegar (1 Tbsp), olive oil (4 tsp), and lime juice (1 Tbsp). Season with salt and black pepper to taste. Stir well and set aside to let the flavors meld.
Season the steak: Pat the skirt steak (6 oz) dry with a paper towel. Season both sides with salt and black pepper to taste.
Grill or pan-sear the steak: Heat a grill or skillet over high heat. Cook the steak for 2-3 minutes per side for medium-rare, or adjust cooking time for your preferred doneness.
Rest and slice: Remove the steak from the heat and let it rest on a cutting board covered with aluminum foil for 5 minutes to allow the steak to retain its juices prior to slicing. Slice against the grain into thin strips.
Serve: Drizzle the chimichurri sauce over the sliced steak and enjoy!
