Preparation
Preheat the oven to 375°F (190°C). Cut a square of parchment paper large enough to encase the salmon (5 oz) and vegetables.
Place the zucchini (½ zucchini), salmon, lemon slices (½ lemon), kale (⅓ cup), cherry tomatoes (2), and asparagus (2 spears) in the center of the parchment paper. Drizzle with garlic herb butter (2 Tbsp) and season with salt and pepper to taste.
Fold over two sides of the parchment to create a parcel, twisting the ends to seal tightly. Place the parcel on a baking tray and bake for 14-18 minutes, until the salmon is cooked through and the vegetables are tender.
Open the parcel slightly and sprinkle dill (1 Tbsp) over the salmon and vegetables. Garnish with an extra squeeze of lemon juice before serving.
Cleans only. Tweaked my shoulder a bit on the MUs and need a rest.
