Chicken Kebobs With Spicy Cashew Sauce

Ingredients
2 ½ oz chicken breast, cubed
1 Tbsp soy sauce
½ tsp ginger, minced
1 tsp chili flakes (or red pepper flakes)
1 Tbsp scallions, sliced
2 tsp lime juice (or rice vinegar)
1 oz yellow bell pepper, cubed
1 ½ Tbsp ghee (or butter)
½ tsp garlic, minced
1 Tbsp cashew butter

Preparation
Marinate chicken: In a bowl, mix together soy sauce (1 Tbsp), minced ginger (½ tsp), chili flakes (1 tsp), and lime juice (2 tsp.) Add the chicken cubes (2 ½ oz) and marinate for 10-15 minutes. Skewer the marinated chicken and yellow bell pepper cubes (1 oz.)
Cook chicken and bell pepper: Heat ghee (1 ½ Tbsp) in a pan over medium heat. Add the chicken kebobs and cook for 3-4 minutes per side, until the chicken is fully cooked and the bell pepper is tender.
Prepare dipping sauce: In a small saucepan, heat the cashew butter (1 Tbsp) with minced garlic (½ tsp), stirring until smooth and slightly warmed. Add a splash of water if needed to thin it out. Drizzle the spicy cashew sauce over the chicken kebobs or serve it on the side as a dipping sauce. Garnish with scallions (1 Tbsp) and extra chili flakes if desired.
