This pork stir-fry combines the savory flavors of miso and soy along with crisp vegetables. 

After a diagnosis of Type 2 Diabetes Journalist Neil Barsky initially followed his doctors advice and began insulin injections. He also did his own research and found a community already aware of the root of the problem. After cutting out the carbs, he dropped his A1C, got off medications, and now considers himself cured.

Ingredients

4 oz pork tenderloin
1 oz snow peas
½ cup red bell peppers, diced
1 ½ tsp sesame oil
1 Tbsp miso paste
1 Tbsp soy sauce

Macronutrients

Protein: 34g
Fat: 19g
Carbs: 10g

Preparation

In a small bowl, whisk together the miso paste (1 Tbsp) and soy sauce (1 Tbsp) until well combined. Set aside.

Heat a wok or large skillet over medium-high heat. Add 1 tsp of sesame oil.  Once the oil is hot, add the sliced pork tenderloin (4 oz.)  Stir-fry for 2-3 minutes until the pork is nearly cooked through.  Add the diced red peppers (½ cup) to the wok and stir-fry for an additional 1-2 minutes until they start to soften.  Add the snow peas (1 oz) and stir-fry for another minute, keeping them crisp-tender.

Pour the miso-soy sauce mixture over the pork and vegetables. Stir to coat everything evenly and cook for another minute to allow the flavors to meld.  Remove from heat and drizzle with the remaining ½ tsp of sesame oil and serve hot.
