Ingredients
½ oz red bell pepper, thinly sliced
4 oz beef, thinly sliced
½ oz broccoli florets
1 Tbsp scallions, chopped
1 Tbsp butter
¼ cup soy sauce (or coconut aminos)
2 eggs
½ tsp black sesame seeds
1 tsp ginger, grated
1 tsp white vinegar (optional)
Salt and pepper, to taste

Preparation
Marinate the eggs: Soft-boil the eggs (6–7 minutes), transfer to an ice bath. Once cooled, peel and marinate in soy sauce and vinegar for at least 30 minutes, or up to 24 hours for more flavor.
Cook the beef and broccoli: Heat 1 tsp butter in a skillet over medium-high. Add the beef (4 oz), season with salt and pepper, and cook for 3–4 minutes until browned. Remove. In the same skillet, sauté broccoli (½ oz) for 2–3 minutes until tender. Set aside with the beef.
Sauté remaining vegetables: Melt remaining 2 tsp butter. Sauté bell pepper (½ oz), scallions (1 Tbsp), and ginger (1 tsp) for 2–3 minutes until softened.
Assemble: Plate the sautéed vegetables, top with beef and broccoli, and add halved soy-marinated eggs. Sprinkle with black sesame seeds. Serve warm.
