Thai-Inspired Chicken Meatballs with Cucumber & Mint Slaw

This dish brings in Thai-inspired flavors with ginger, lime, and fresh herbs. The cucumber and mint slaw provides a crisp, refreshing contrast to the savory, spiced chicken meatballs.

Ingredients
For the Chicken Meatballs:
8 oz ground chicken
¼ cup almond flour
1 egg, beaten
1 Tbsp fresh ginger, grated
1 clove garlic, minced
1 Tbsp green onions, finely chopped
½ tsp fish sauce (or soy sauce)
¼ tsp chili flakes (optional, for a bit of heat)
Salt and pepper, to taste
1 Tbsp coconut oil
For the Cucumber & Mint Slaw:
1 cup cucumber, julienned or thinly sliced
½ cup red cabbage, thinly sliced
¼ cup carrot, julienned
1 Tbsp fresh mint, chopped
1 Tbsp fresh cilantro, chopped
1 Tbsp rice vinegar
½ Tbsp lime juice
½ Tbsp olive oil
¼ tsp sesame seeds (optional)
Salt and pepper, to taste

Preparation
Prepare the meatballs: In a bowl, mix together the ground chicken (8 oz), almond flour (¼ cup), beaten egg (1), grated ginger (1 Tbsp), minced garlic (1 clove), finely chopped green onions (1 Tbsp), fish sauce (½ tsp), chili flakes (¼ tsp), salt and pepper to taste. Form into small meatballs.
Cook the meatballs: Heat the coconut oil (1 Tbsp) in a skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides and fully cooked through (about 8-10 minutes). Remove from the heat and set aside.
Prepare the slaw: In a bowl, combine the sliced cucumber (1 cup), sliced red cabbage (½ cup), julienned carrot (¼ cup), chopped mint (1 Tbsp), and chopped cilantro (1 Tbsp). In a small jar, mix the rice vinegar (1 Tbsp), lime juice (½ Tbsp), olive oil (½ Tbsp), salt and pepper to taste. Pour the dressing over the slaw and toss to combine. Sprinkle with sesame seeds (¼ tsp) if using.
Serve: Arrange the slaw on a plate and place the chicken meatballs on top. Garnish with extra mint or cilantro, if desired.
