Ingredients

4 bone-in, skin-on chicken thighs (about 1½ lbs)
2 Tbsp butter, melted (for searing)
1 Tbsp fresh rosemary, finely chopped
2 cloves garlic, finely minced
½ tsp sea salt
¼ tsp black pepper
¼ tsp smoked paprika
1 Tbsp olive oil (for finishing)

Preparation
Preheat the oven to 400°F (200°C). 

Prepare the chicken: Pat the chicken thighs (4 thighs) dry with paper towels. In a small bowl, mix the chopped rosemary (1 Tbsp), minced garlic (2 cloves), sea salt (½ tsp), black pepper (¼ tsp), and smoked paprika (¼ tsp). Rub the rosemary seasoning mixture evenly under and over the chicken skin. Heat the melted butter (2 Tbsp) in an oven-safe skillet over medium-high heat.

Cook the chicken: Sear the chicken thighs skin-side down for 4–5 minutes until golden and crispy. Flip and sear the other side for 2–3 minutes.

Bake the chicken: Transfer the skillet to the oven and roast for 20–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).

Serve: Remove from the oven and let rest for 5 minutes. Drizzle with olive oil (1 Tbsp) before serving.
