Preparation
Prepare the Beef Burgers: In a bowl, mix the ground beef (8 oz) with smoked paprika (1 tsp), garlic powder (½ tsp), onion powder (½ tsp), ground cumin (½ tsp), chili powder (¼ tsp), sea salt (½ tsp), and black pepper (¼ tsp). Form into two thick patties. Melt the butter (1 Tbsp) in a skillet over medium-high heat.Sear the patties for 3–4 minutes per side, or until cooked to your desired doneness. Remove from heat and rest for 2–3 minutes.
Prepare the Garlic Aioli Slaw: In a large bowl, combine shredded cabbage (1½ cups) and shredded carrot (¼ cup). In a small bowl, whisk together avocado oil mayonnaise (2 Tbsp), olive oil (1 Tbsp), minced garlic (1 clove), apple cider vinegar (1 tsp), Dijon mustard (½ tsp), sea salt (¼ tsp), and black pepper (¼ tsp) until creamy. Pour the dressing over the cabbage and carrot mixture. Toss well to coat and chill until ready to serve.
Assemble the Bowl: Spoon a generous portion of garlic aioli slaw into a bowl. Top with the BBQ-spiced beef burger. Drizzle with olive oil (1 Tbsp) and garnish with chopped parsley (1 Tbsp), if desired.
Gary Taubes explores the historical debate between calorie restriction (eating less overall) and carbohydrate restriction (limiting carbs regardless of calories). He highlights that early calorie-restriction research, such as the Biosphere 2 experiment, had unintentional carb restriction due to the food mix, muddying results and revealing that benefits like improved metabolism may stem more from reduced carbs than reduced calories alone.
