Preparation
Sear the pork: Season the pork (6 oz) with garlic powder (½ tsp), salt, and pepper. Heat 1 Tbsp butter in a skillet over medium-high heat. Once hot, add the pork and sear for 3–4 minutes per side until golden and cooked through. Remove and let rest.
Cook the green beans: In the same skillet, melt ½ Tbsp butter. Add the green beans (1 cup) and sauté for 4–5 minutes until tender but still crisp. Season with salt to taste. Remove from pan and set aside.
Make the garlic butter sauce: Reduce heat to medium-low. Add 1 Tbsp butter to the pan along with minced garlic (1 clove). Sauté for 30 seconds until fragrant. Stir in lemon juice (1 tsp), Dijon mustard (½ tsp, if using), and chopped parsley (2 tsp). Season with salt to taste.
Serve: Place pork on a plate and spoon garlic butter sauce over the top. Serve with sautéed green beans on the side and garnish with extra parsley if desired.
