Savory pork-and-onion discs with soft-set egg centers and a parsley-lemon butter drizzle
Part 10: An existential crisis?

Ingredients
For the Pork Discs:
8 oz ground pork (preferably 80/20)
¼ cup yellow onion, finely diced
1 clove garlic, finely minced
½ cup finely crushed pork rinds
1 egg (for binding)
½ tsp smoked paprika
½ tsp sea salt
¼ tsp black pepper
2 Tbsp butter (for sautéing onion and garlic)
For the Egg Centers:
4 small pasture-raised eggs (one for each disc)
For the Topping and Sauce:
2 Tbsp grated Parmesan cheese
2 Tbsp butter (for the sauce)
1 Tbsp fresh parsley, chopped
1 tsp lemon juice
Pinch of sea salt

Preparation
Prepare the Pork Mixture: Preheat the oven to 375°F (190°C). In a skillet, melt butter (2 Tbsp) over medium heat. Sauté the diced onion (¼ cup) and minced garlic (1 clove) until soft and fragrant, about 3–4 minutes. Remove from heat and let cool slightly.
In a large bowl, combine ground pork (8 oz), sautéed onion and garlic, crushed pork rinds (½ cup), egg (1), smoked paprika (½ tsp), sea salt (½ tsp), and black pepper (¼ tsp). Mix until just combined.
Form the Pork Discs: Divide the mixture into 4 portions. Shape each into a thick disc with a shallow indentation in the center (to hold the egg later). Place the discs on a parchment-lined baking sheet.
Prebake the Pork Discs: Bake the discs for 12–14 minutes, until mostly cooked but not fully set. Remove from the oven.
Add the Eggs: Crack a small egg (4 total) into the center of each disc. Sprinkle each disc lightly with grated Parmesan (2 Tbsp total). Return to the oven and bake for another 7–9 minutes, or until the egg whites are set but the yolks are still soft.
Prepare the Sauce: While the pork and eggs finish, melt the butter (2 Tbsp) over low heat. Stir in chopped parsley (1 Tbsp), lemon juice (1 tsp), and a pinch of sea salt. Keep warm.
Assemble the Dish: Drizzle the parsley butter sauce over the baked pork discs. Serve hot, with extra Parmesan if desired.

Preheat oven to 375°F. Foil-line small dish.
Mix pork, garlic powder, salt, pepper, rinds, beaten egg, butter.
Shape into 2 discs with indent. Crack egg in each. Top with Parmesan.
Bake 20 min until done.
Serve hot.
