Ingredients
6 large eggs
½ cup shredded sharp cheddar cheese
¼ cup full-fat sour cream or heavy cream
1 jalapeño, thinly sliced (seeds removed for less heat)
2 Tbsp chopped green onions or chives
¼ tsp garlic powder
Salt and pepper, to taste
1 Tbsp butter or ghee (for greasing)
2 oz cooked bacon or sausage crumbles
2 Tbsp chopped cilantro

Preparation
Set oven to 350°F (175°C). Grease an 8x8 baking dish or small casserole dish with butter or ghee.
In a mixing bowl, whisk eggs, sour cream (or heavy cream), garlic powder, salt, and pepper until smooth.
Fold in shredded cheddar, sliced jalapeño, and green onions. Stir in bacon or sausage if using.
Pour mixture into the greased baking dish. Bake for 22–25 minutes, or until center is set and top is slightly golden.
Cool slightly before slicing. Garnish with fresh cilantro or extra jalapeño slices if desired.
