Apricot Soy Chicken with Ginger Broccoli
Why probability probably doesn’t exist (but it is useful to act like it does)

Completes as many rounds as possible in 15 minutes of:
3 burpees
3 DB hang clean & jerks
Lunge 30 feet
6 burpees
6 DB hang clean & jerks
Lunge 30 feet
9 burpees
9 DB hang clean & jerks
Lunge 30 feet
... etc., adding 3 reps per round
Chicken breast drizzled with a sweet and savory apricot-soy glaze, served alongside roasted ginger broccoli.
All of statistics and much of science depends on probability — an astonishing achievement, considering no one’s really sure what it is.
Jump over the dumbbell on each burpee.
Men use a 50-lb. dumbbell. Women use a 35-lb. dumbbell.
Lunge 15 feet down and 15 feet back each round. The length of the lunge does not change, while the reps of the burpee and C&J increase each round.
Post number of rounds completed, as well as load used on the dumbbell.
Ingredients
1 chicken breast (6 oz)
½ fresh apricot (pitted and mashed)
1 Tbsp soy sauce
½ Tbsp ginger (peeled and minced)
1 ½ Tbsp butter (divided)
½ clove garlic (minced)
½ lime (zested and cut into two wedges)
1 cup broccoli florets (cut into bite-size pieces)
½ tsp sesame seeds (toasted)
½ Tbsp fresh cilantro (chopped)
Salt and pepper, to taste

Preparation
Prep Ingredients: Preheat the oven to 450°F. Mince ginger (½ Tbsp) and garlic (½ clove), zest lime (½ lime), and mash the apricot (½). Chop fresh cilantro (½ Tbsp).
Roast Broccoli: Toss broccoli (1 cup) with melted butter (½ Tbsp), half of the minced ginger (¼ Tbsp), salt, and pepper on a baking sheet. Roast on the top rack for 12-15 minutes until browned and tender.
Cook Chicken: Pat chicken breast (6 oz) dry and season with salt and pepper. Heat butter (½ Tbsp) in a large pan over medium-high heat. Cook chicken for 4-6 minutes per side until golden brown and the internal temperature reaches 165°F. Remove and let rest.
Make Pan Sauce: In the same pan, add butter (½ Tbsp) and the remaining ginger (¼ Tbsp) and garlic (½ clove). Sauté for 30 seconds until fragrant. Add mashed apricot (½), lime zest and soy sauce (1 Tbsp), and 2 Tbsp water. Simmer for 3-4 minutes until the sauce thickens. Remove from heat and stir in a squeeze of lime juice.
Finish & Serve: Slice chicken and serve with roasted broccoli. Drizzle the apricot sauce over the chicken. Sprinkle toasted sesame seeds (½ tsp) and fresh cilantro (½ Tbsp) over the top. Serve with lime wedges on the side.
