Preparation

Prepare the dressing: In a small bowl, whisk together olive oil (1 Tbsp), lime juice (½ Tbsp), ground cumin (¼ tsp), salt, and pepper to taste. Set aside.

Grill the chicken: Season a 4‑oz chicken breast with salt and pepper. Preheat your grill to medium-high heat and cook the chicken for about 6–7 minutes per side, or until it’s fully cooked through. Allow the chicken to rest for a few minutes before slicing.

Assemble the salad: In a large bowl, combine the mixed greens (2 cups), diced avocado (¼), diced mango (¼ cup), sliced red bell pepper (¼), sliced cucumber (¼), and finely sliced red onion (1 Tbsp). Toss gently to mix.

Add the chicken: Arrange the grilled chicken slices on top of the salad.

Dress and serve: Drizzle the dressing over the salad and sprinkle with chopped fresh cilantro (1 Tbsp) before serving.

Through COVID-19 and into today’s world, Adam has found that questioning prevailing narratives has become more and more rare, even when official narratives are irrational.
