Preparation
Preheat the oven: to 425°F (220°C). Line a baking sheet with foil and coat it with butter (½ Tbsp).
Mix the meatloaf: by combining ground pork (6 oz), pork rind crumbles (2 Tbsp), scallion whites (1 Tbsp), chopped jalapeños (1 Tbsp), smoked paprika (½ tsp), garlic powder (¼ tsp), cayenne pepper (¼ tsp), and salt and pepper to taste in a bowl. Mix just until combined. Form into a 1-inch-tall loaf and place it on the prepared baking sheet.
Roast the meatloaf: on the top rack for 18–20 minutes, or until fully cooked and golden on top (internal temp should reach 160°F/71°C).
