Smoked salmon, creamy avocado, and crisp greens come together in this satisfying breakfast bowl, topped with a soft-boiled egg and drizzled with lemony olive oil.

Ingredients
2 oz smoked salmon (wild-caught, nitrate-free)
½ avocado, sliced
1 egg
1 cup baby spinach or arugula
1 Tbsp olive oil (for drizzling)
1 tsp lemon juice
1 Tbsp red onion, thinly sliced
Salt and black pepper, to taste

Preparation
Cook the egg: Bring a small pot of water to a boil. Gently lower in the egg and soft-boil for 6–7 minutes. Transfer to an ice bath, then peel and set aside.
Assemble the bowl: In a serving bowl, arrange baby spinach or arugula (1 cup) as the base. Top with smoked salmon (2 oz), sliced avocado (½), and red onion (1 Tbsp).
Finish with toppings: Slice the soft-boiled egg in half and add it to the bowl. Drizzle with olive oil (1 Tbsp) and lemon juice (1 tsp). Season with salt and pepper to taste.
