Ingredients
3 oz chicken breast, cubed
2 slices bacon, chopped
1 Tbsp butter
1 Tbsp olive oil
2 Tbsp sour cream
1 Tbsp mayonnaise (sugar-free, clean ingredients)
1 tsp apple cider vinegar
1 Tbsp fresh dill, chopped
1 Tbsp fresh parsley, chopped
½ tsp garlic powder
½ tsp onion powder
Salt and pepper, to taste
¼ cup baby spinach, chopped

Preparation
In a small bowl, whisk together the sour cream (2 Tbsp), mayonnaise (1 Tbsp), olive oil (1 Tbsp), apple cider vinegar (1 tsp), fresh dill (1 Tbsp), fresh parsley (1 Tbsp), garlic powder (½ tsp), onion powder (½ tsp), and a pinch of salt and pepper to create your homemade ranch dressing. Set aside.
Heat a pan over medium heat and add the butter (1 Tbsp). Cook the chopped bacon (2 slices) until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.
In the same pan, cook the cubed chicken breast (3 oz), seasoning with salt and pepper, and sauté until golden and cooked through. Add the crispy bacon back to the pan along with the prepared ranch dressing.
Stir everything well to coat the chicken and bacon in the creamy sauce. Toss in the chopped baby spinach (¼ cup) and allow it to wilt slightly.
Plate and serve immediately.
