Ingredients

6 oz flank or sirloin steak
2 large eggs
1 Tbsp butter (for eggs)
1 Tbsp ghee or butter (for steak)
¼ cup spinach, chopped
¼ cup red bell pepper, diced
1 Tbsp red onion, finely chopped
Salt and pepper, to taste
Optional: 1 tsp olive oil (finishing) or hot sauce

Macronutrients

Preparation

Season steak with salt and pepper. Heat 1 Tbsp ghee in a skillet over medium-high heat. Sear steak 3–4 minutes per side for medium-rare, or to your preference. Let rest, then slice thinly.

In the same pan, add red onion and bell pepper. Sauté for 2–3 minutes. Add spinach and cook until just wilted. Set aside.

In a separate pan, melt 1 Tbsp butter. Fry or scramble the eggs as desired. Season with salt and pepper.

Layer veggies on the bottom, followed by sliced steak and eggs on top. Drizzle with olive oil or hot sauce if desired.
