Ingredients

6 large eggs
4 oz ground chorizo (no sugar added)
½ cup shredded cheddar or Monterey Jack cheese
¼ cup heavy cream or full-fat coconut milk
¼ cup red bell pepper, diced
2 Tbsp onion, finely chopped
1 Tbsp butter or ghee (for greasing)
¼ tsp garlic powder
Salt and pepper, to taste
Optional: sliced jalapeños or chopped cilantro for topping

Preparation

Preheat to 350°F (175°C). Grease an 8x8-inch baking dish or equivalent with butter or ghee.

In a skillet over medium heat, cook ground chorizo until browned and cooked through, about 5–6 minutes. Drain excess fat if needed.

In a bowl, whisk eggs, heavy cream, garlic powder, salt, and pepper. Stir in cheese, bell pepper, onion, and cooked chorizo.

Pour mixture into the greased baking dish. Top with extra cheese or jalapeños if desired. Bake for 22–25 minutes or until the center is just set.

Let cool slightly before slicing. Garnish with fresh cilantro if desired.
