Ingredients
4 large eggs
1 Tbsp butter or tallow (for cooking)
½ lb ground turkey or breakfast sausage
4 slices bacon, cooked and crumbled
½ cup shredded cheddar or Monterey Jack cheese
1 small avocado, diced
¼ cup salsa or diced tomatoes
¼ cup chopped cilantro
½ tsp smoked paprika
½ tsp garlic powder
Salt and black pepper, to taste

Preparation
Heat a skillet over medium heat and add butter or tallow. Add the ground turkey and season with smoked paprika, garlic powder, salt, and pepper. Cook 5–6 minutes, breaking it apart until browned and cooked through. Remove and set aside.
In the same skillet, add the eggs and scramble gently over medium heat until soft and fluffy. Season lightly with salt and pepper.
Assemble the bowls by dividing the eggs and cooked turkey between two bowls.
Top each with crumbled bacon, shredded cheese, diced avocado, and a spoonful of salsa or tomatoes.
Sprinkle with chopped cilantro and serve warm.
