Ingredients

4 beef tenderloin steaks (about 6 oz each)
1 Tbsp butter or tallow (for searing)
2 cloves garlic, smashed
1 sprig fresh rosemary or thyme (optional)
Salt and black pepper, to taste

Preparation

Pat steaks dry and season with salt and pepper.

Heat butter or tallow in a skillet over medium-high heat. Add garlic and herbs if using.

Sear steaks 3–4 minutes per side for medium-rare, or to preferred doneness.

Spoon butter over the steaks as they cook. Remove and rest 5 minutes before serving.
