Preparation

Sear the chicken: Season chicken thighs with salt and pepper. Heat butter or ghee in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side until browned and cooked through. Remove and set aside.

Sauté the mushrooms: In the same skillet, add sliced mushrooms. Sauté for 5–6 minutes until browned and softened. Add garlic and thyme, cook for another minute.

Make the sauce: Pour in the bone broth and coconut cream. Stir to combine and simmer for 3–4 minutes, letting the sauce thicken slightly.

Combine: Return the chicken to the skillet and simmer in the sauce for 2–3 more minutes. Drizzle with olive oil and garnish with chopped parsley before serving.

The article from Let's Start With The Truth examines the new federal Medicaid rule restricting federal funding for pediatric gender-affirming medications and surgery, focusing less on the culture-war debate and more on how the rule actually works. CMS is not banning the care or changing its legal or FDA status. Instead, it removes the federal share of Medicaid funding, meaning states that continue covering the care would have to pay the full cost themselves. The article focuses on the legal mechanism CMS used, arguing that the agency relied on broad statutory language about efficiency and quality of care to create a mandatory funding exclusion that Congress did not explicitly include. Medicaid experts warn that if courts uphold this approach, future administrations could potentially use the same mechanism to restrict federal funding for other lawful drugs and services.
