Ingredients
For the Egg Tortillas:
3 large eggs
1 Tbsp heavy cream
1 Tbsp butter
Pinch salt
For the Filling:
4 oz breakfast sausage (no sugar added)
2 large eggs
1 Tbsp butter
¼ avocado, sliced
2 Tbsp cheddar cheese, shredded
1 Tbsp green onions, sliced
Salt & pepper
For the Fresh Tomato Salsa:
2 Tbsp diced tomato
1 Tbsp red onion, finely chopped
1 tsp lime juice
1 tsp olive oil
Pinch salt

Preparation
Whisk the tomato, red onion, lime juice, olive oil, and salt together in a small bowl. Set aside to allow the flavors to blend.
In a skillet over medium heat, cook the sausage until browned and fully cooked. Remove from the pan and set aside.
Whisk 3 eggs with heavy cream and a pinch of salt. Heat butter in a nonstick skillet over medium-low heat. Pour in half of the egg mixture and swirl into a thin, crepe-like round. Cook 1–2 minutes per side until set. Repeat with the remaining mixture to form a second tortilla.
In the same skillet, melt butter and gently scramble the remaining 2 eggs over low heat until soft and fluffy. Season with salt and pepper.
Place scrambled eggs and sausage down the center of each egg tortilla. Top with shredded cheddar, avocado slices, green onions, and a spoonful of fresh tomato salsa. Serve immediately while warm.
